If you have enjoyed delicious cookies at a street festival or farmers’ market this summer, you may have already purchased from local business, The Groovy Cookie. The business is the ultimate dream for anyone with a sweet tooth, as it sells half-pound cookies overloaded with candies, stuffed cookies with a surprise inside, edible cookie dough jars, cookie pies, and 10-inch cookie pizzas.

As the business expands, more people have gotten to know and love the giant gourmet cookies. Yet, not many people know that the local business is owned and operated by a sole baker: 21-year-old Owen Eubanks, of Islip.

Eubanks started The Groovy Cookie on July 15, 2021, and just celebrated both the two-year anniversary of his company and his graduation from Johnson and Wales University, with a major in baking and pastry and a minor in marketing. With his New York State home processing license, Eubanks bakes all of his baked goods by himself from his home kitchen.

Last summer, Eubanks and his father fully converted a cargo trailer they had into a food trailer to sell his treats.

“My dad freehanded the window on the side of the trailer and cut the window in the side. We put down the flooring and installed electric, plumbing, all that,” explained Eubanks. “It has definitely helped my business; it just attracts more people and draws them in.”

This summer, The Groovy Cookie has been a hit at street festivals and farmers’ markets all across Long Island, including Deep Roots Farmers’ Market in Glen Cove, Three Village Farmers’ Market in Setauket, Alive After Five in Patchogue, Alive by the Bay in Bay Shore, St. James Summer Nights, and the Port Jefferson Farmers’ Market.

The Groovy Cookie will also be selling at the highly anticipated Summerfest in Sayville, Aug. 4, 5, and 6. Selling cookies in a variety of sizes, along with fresh-squeezed lemonade in 17 different flavors, it is no wonder why The Groovy Cookie has had so much success at these markets and festivals.

In addition to the baked goods and refreshments, Eubanks brings much more to each event—a passion for his craft.

“I love being able to interact with the public as much as possible, seeing repeat customers, and seeing people’s facial expressions when they bite into the cookies or drink the drinks we have,” shared Eubanks. “Everyone lights up when they see it. Yeah, the money is great for the business, but I really do it for people’s facial expressions and seeing how excited they get each week when they come to the farmers’ markets.”
